Heavy Cast Aluminum Pressure Cooker/Canner
This heavy-duty pressure cooker's large capacity is probably excellent utilized for canning (though it would in addition be excellent for a number of cooking tasks). A pressure cooker is generally recommended when canning vegetables and nonacid fruit, since the high heat this can be generated will kill extra bacteria than a regular hot water bath. Made from cast aluminum, together with sturdy screws to seal the lid to the pot, this pressure cooker requires no rubber or plastic gaskets or rings. Its 15-1/2-quart capacity holds 10 pint jars or 7 quart jars. A three-environment pressure regulator valve is integrated, and the pressure gauge provides a clear reading. I chose this canner because it had both the dial and weighted gauges. At my elevation, I pressure can at 11 lbs pressure, so need the dial gauge for accuracy, but the weighted gauge lets me "calibrate" at home.

I've put up hundreds of cans with this over the past decade. It has never had any problems. The instruction book is clear, it's easy to use, and it's a workhorse.

When I cook a pot of soup, chili, etc, I double or triple the recipe and make it in a big stockpot instead of a dutch oven, then can the excess so we always have lots of homemade meals on hand all the time.

I used to use it for garden excess too, but decided I like vegetables better frozen. I just use this for spaghetti sauce now.

I also used it for water-bath canning before I had a water-bath canner. So I did things like pickles and relishes in this also.

The ONLY downside I can think of is that it's heavy. You tend to store a canner in an out-of-the-way spot since it's not an every day item, and it's a pain to get out. That's why I eventually bought a water-bath canner too.

While expensive, I think it's worth it if you're going to do any serious canning at all. I bought this before I had ever put up a single jar, and definitely think it was an excellent purchase - few appliances I've bought over my lifetime get the workout this canner does.

I'm on here looking at it now as I'm buying a second one for my daughter's birthday. She can't wait to inherit mine. ;)

I took a look at the cheap China canner by Presto in a store and I wasn't too impressed with it (local price $120, on sale for $90). I've heard horror stories from local people who have used cheap canners & I decided that since I'd be using this item so much, I should get the best I could. At $180 it comes between a pinch and "boing". Boy was I happy I did! This is a substantial cooking piece. The walls are incredibly thick and the gauge is a quality piece of machinery. There is an emergency pressure release device which consists of a hole plugged by a small rubber stopper. I would recommend that when you buy this, you order a spare plug (if available). Should this safety feature be needed, you need to replace it & you certainly don't want to be in the middle of canning and need to wait for it. The directions also state that every season or so it ought to be replaced.

I had no problems with the lid sticking or seating. Olive oil is recommended as the greaser of choice, followed by Vaseline. I used olive oil & simply followed the instructions as to where to apply it. It is also recommended that as soon as the gauge reads "0" you remove the lid. This will also help to keep the lid from sticking because of the vacuum that will be created as the contents cool. Before loosening the lid, I removed the pressure weight control and allowed any excess steam to escape. Even at a reading of "0" some steam came out.

A few things to bear in mind. Because the wall is so thick, it takes a while for it to heat up (and cool off). I would recommend when you first use it for the day that you use pre-heated water and start heating the pot just before you need it simply to save some time. Also, if you are going to can, plan on doing a few batches to take advantage of the pot's thermodynamics.

I decided on this size pot, rather than the 21 qt simply because I am using this only for canning. Both pots hold 7 quarts and are the same diameter, but the shorter height of this unit means I'm not pressurizing a lot of extra & unneeded space. Just something to think about when you're deciding.

The company packages the pot in a cardboard box with a Styrofoam piece to protect the gauge & lid handle. This is sufficient if the box is packaged properly, but Amazon decided to put the whole thing into a much bigger box with no other packaging. When I opened it, there was damage to the inner box from one of the handles. No damage was present, but this is just unacceptable for an item costing nearly $200. Shame on Amazon.

One last thing, this canner is heavy (even more so loaded), so it is explicitly not recommended for glass top burners.

I have used this canner several times since my purchase. It works very well, but the only drawback
is its weight. I had to have my husband lift it for me.

Before I bought this All American 915 canner I did lots of research, I am new at this! scared of the blowing gaskets or replacing them, then reading reviews about the sticky lid and it is very hard to find in Canada, I wasn't sure! Presto is a way a cheaper brand and for what I read most people are satisfied with it(Presto) All American is a way more expensive in Canada (custom duties) finally I decided to go for the All American, I just did my first 2 batches of beans and it is very easy to use, did lubricate the lid as indicated in the instruction manual, then didn't let cool off too much because it will form a vacuum (in physics this explains the sticky lid) but I felt so safe when using it, didn't have to worry about the blowing gasket, it might take a bit longer to cool off than other brands but that's because this All American is very thick( or heavy duty!), which means it will not blow up in the kitchen. It is safer as a canner, now if you are looking for something to pressure cook only then consider cheaper brands.
I gave it 4 stars because it says it fits 10 pint jars (standard mason) but there is no way, it fits only 9, kind of disappointed me because I had 10 pints ready to process and eventually I have to buy parts, the wing nuts will crack at some point. Also now I have to keep a Vaseline container in my kitchen. also it won't water bath quart (you have to put more water) but it will can them.
I would buy it again! but looks like it will last a while!
